PARTY RICE SALAD (serves 20)

Cook  2 1/2 cups raw rice ( I used Wehani rice from Outpost; you can use brown rice or wild rice too.)

1 boned roasted chicken, chopped in small pieces
2  cups seedless red grapes
2 diced and seeded sweet red peppers
1 cup chopped celery
1 cup dried cranberries or cherries
1 cup chopped pecans or walnuts
2 bunches scallions, cleaned and chopped

Balsamic Vinaigrette Dressing
3/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup sugar (or to taste)
2 tablespoons jam or preserves (such as raspberry, cherry, or strawberry or whatever you have)

Combine cooked rice with other ingredients. Toss with dressing right before serving.
